Meal Plan – Week 2

So that’s me after I cleaned out my fridge and saw what I had on hand to cook. (Yes, my sweater got dirty but nothing is perfect.) That’s how I start off the weekends. Now, it’s Sunday evening and that means it’s time for another meal plan. I’ve already planned, shopped, and now there is one last step. If you’re not familiar with the process I use, be sure to download it here. I only share dinner plans with you because the rest is variable. Also, we eat leftovers so 4-5 meals is all that is necessary for the week. Breakfast could be cinnamon rolls, oatmeal, cereal, or boiled eggs. Lunch is normally leftovers or something simple like salads, sandwiches, or naan pizza.

Dinner is the hard part! Everyone is tired, hungry, and wanting to know “when will dinner be ready?” I get it…I’ve been there too. I want to help you. That is why I’m sharing my dinner plans with you. Maybe you’ll see a meal that appeals to your family or inspires your dinner. If that happens, that’s a win for me. So here goes the second week of 2018’s meal plan.

Barbacoa Beef Burrito Bowl

So every now and then I try something new. This is one of those weeks. My entire family loves Chiptole (that’s my salad from Chiptole above). So it just occurred to me last week…why don’t we try this at home? I know Chiptole does burritos well. I mean it’s REALLY GOOD! But, I love cooking at home and figured we could definitely pull it off. So, I researched a few recipes for the main ingredient we love – Barbacoa beef. We will also include brown rice, corn salsa, black beans, and avocado. Marley and I love salad so we may make salads too. Once we have the main ingredients each family member can make what they want…nachos, burritos, or even a salad.

Guilt-Free Lasagna

This recipe is a classic dinner, loved by the entire family. There will be a few adjustments I’ll be making to this recipe to make it “guilt free” or healthier for you. I’ll be swapping out a few ingredients in hopes that the family won’t even know. The recipe for this version of lasagna will be on the blog in the next 2 weeks, so stay tuned. I don’t cook many pasta recipes but lasagna is one of them. I’m looking forward to this new version!

Homemade Chicken Noodle Soup

This Friday my daughter is getting some work done at the dentist. So I figured she’ll need something light to eat that evening. I’m preparing by adjusting my meal plan to accommodate this. You can also look ahead at your schedule and see what food would be best based on the day’s activities. Extra activities? Keep the meal short. Everyone home early? Make a classic family favorite like lasagna. Get it?

Pan Seared T-Bone Steaks

Beef is pretty expensive so I normally wait for it to go on sale before I purchase. This weekend T-Bone steaks were on sale at my local grocery store so I picked up a value pack. That is perfect for us. I love roasted veggies with steak and the kids love bakes potatoes with all the fixings. So, I’ll probably do a mixture of both. I have a few veggies that will need to be cooked this week so that will work out perfectly.
