Three Bean Taco Soup

This comforting soup is packing a ton of flavor.

Gosh, I love soup! Three Bean Taco Soup is a recipe someone gave me many years ago and it’s definitely a keeper. The entire family likes this recipe, especially with the optional toppings!

What’s really great about this recipe is – it’s simple and quick to cook, packs a ton of flavor and nutrition, and is a one pot meal. What’s not to love? With the cooler winter months approaching, this would be a great recipe to cook. It only takes about 30 minutes from start to finish.

Three Bean Taco Soup

This delicious soup is quick to make and is so comforting. It contains a ton of fiber and protein and packs a ton of flavor. Serve with all your favorite toppings and enjoy!

Ingredients

Scale
  • 1 1/2 pounds of ground meat or ground turkey
  • 1 bunch of chopped green onions
  • 1/2 white onion
  • 1 teaspoon of minced garlic
  • 2 cups of beef stock
  • 1 can of black beans
  • 1 can of pinto beans
  • 1 can of red kidney beans
  • 1 can of corn
  • 1 can of Rotel diced tomatoes
  • 1 package of Ranch dressing packet
  • 1 taco seasoning packet
  • Garlic powder
  • Season all
  • Optional toppings: Corn chips, sour cream, green onions, cheese

Instructions

  1. Brown green and white onions in olive oil. Add garlic.
  2. Add ground beef or turkey to pot and cook thoroughly. Drain the grease.
  3. Add taco and ranch packet seasonings to meat with 1/4 cup of water. Bring to a mild simmer. This will take about 2-3 minutes.
  4. Add the can of diced tomatoes, beans, corn, and beef stock to pot. Bring to a simmer. Let simmer for approximately 10-15 minutes. Keep it a mild simmer to keep the beans together.
  5. You’re done! Serve with optional toppings.

Notes

TIP: If you want more juice in your soup add more beef stock. I sort of “eye-ball” mine anyway.

This soup contains black beans, pinto beans, and kidney beans. Beans are high in potassium, calcium, iron, and fiber. When I say it’s nutritious, I really mean it! What other recipes do you have that contain 3 types of beans and protein? I don’t! But, good for you if you do. If you opt for the ground turkey, which I have done in the past, you’ll definitely make this recipe a clean eat.

Also, the beef stock really brings all the flavor together. You can definitely use water if you don’t have beef stock. However, you’re really missing out, especially if you use ground beef for your meat. If you meal plan, then you should have most, if not everything, on hand.

One last thing to mention is that this is a one pot meal. I enjoy cooking many one pot meals – jambalaya, red beans, gumbo, etc. They are sort of my thing. I cook most of my one pot meals in the dutch oven found here. It’s my favorite pot to cook in, so I find every opportunity to use it.

TIP: Don’t forget to try some of the optional toppings. We always do cheese and corn chips. Occasionally, I’ll add a little sour cream to mine as well. Green onions would be a fresh optional topping to try too.
