Welcome Spring with a Blackberry Pineapple Smash Cocktail!

Guess what?! Spring is here! It’s been the longest winter of my life and maybe yours too. Yes, the snow was awesome and the gumbo was tasty. But, at some point, spring fever set in for me. I pulled out my bright white sofa covers back in January and starting creating new cocktails. I was just so ready for some brighter days filled with warm sun and BBQ.

What’s even better, a lot of you have been waiting patiently for spring too. That’s why I thought it’d be fitting to have a spring blogger collaboration so you could get inspiration from a range of topics. Today, I’m introducing Spring Fever ’18, a blogger collaboration where you’ll see some fashion/beauty, food/drink, and lifestyle inspiration that will give you all the spring feels. I just know you’re going to enjoy it! For us, spring means firing up the BBQ pit, more playtime outside, and refreshing (cold) drinks to sip on. Another thing I like about spring is that there are a slew of fresh and readily-available fruits, like blackberries, pineapple, and watermelon. They taste good by theirselves but 10x better when you use them in cocktails too. Plus, they are cheaper in spring/summer time too! Fruit is exactly what inspired this Grapefruit Moscow Mule  and this Blackberry Moscow Mule.




Today, I’ll be sharing a Blackberry Pineapple Smash cocktail with you. It contains a fresh blackberry syrup, pineapple juice, and more. It’s super easy to make a blackberry syrup. Simply adding in 1 cup of simple syrup to 1 cup of blackberries. Be sure to smash (or blend) and strain the blackberries! It’s a thicker, sweetened version of the fruit that you can use to to add some pizzaz to your drinks. You can even use it to make non-alcoholic versions of the drink as well. Just omit the alcohol. We do that all the time for our kids.

Blackberry Pineapple Smash Cocktail

This cocktail will give you all the spring feels. It features fresh blackberries, pineapple, and more. Serve it over ice with tacos, BBQ, or just for kicks. Enjoy!

Ingredients

Scale
  • 2 ounces Blackberry Syrup (To make the syrup blend and strain 1 cup of simple syrup and 1 cup of blackberries.)
  • 1 ounce Lime Juice
  • 34 ounces Pineapple juice
  • 2 ounces Vodka

Instructions

  1. Add all ingredients to a cocktail shaker and shake for 15 seconds. Pour over ice. Garnish with blackberries and mint. Enjoy!

This drink is super simple to make and will definitely give you all the spring feels. With the winter we’ve had, “spring feels” is definitely a thing! Ha! Normally, pineapple takes over the flavor whenever it’s in food or drinks. However, the blackberry syrup definitely gives the pineapple a “run for it’s money”. They are competing for your taste buds on this one. I’d love to know which one is the winner for you. Everyone’s palette is different and I always love hearing what people think of different cocktails and wine.

You know how I feel about garnish…it’s everything! Fresh fruit, herbs, and paper straws are an easy way to show guests that you care. They will give you a remark before they even taste the drink. Of course, what’s in the drink is definitely important but like I mentioned everyone has different palettes too. Serving up a pretty drink is essential to spring, so get busy with a new recipe.
