What’s for Dinner? Week of July 22

It’s been a while since I’ve shared what my family is having for dinner or just dinner ideas in general. Summer is busy and I’ll be honest. I haven’t been meal planning like I normally do. As a busy Mom, I just let it go this summer. Maybe you did too! With school a few weeks out from starting, now is a good time to get back into the meal planning routine. I’ll be sharing more meal planning tips over the next few weeks, but let’s give you the information you came here for. Here’s what we will be feasting on for dinner this week.

Slow Cooker Barbacoa Beef

Since we work and do school at home, I’m always looking for shortcuts. Cooking barbacoa beef allows you the ability to make multiple meals. It’s basically like a food hack to me because it saves you time. We normally start by making tacos or salad (my daughter and I love making a salad). Of course, I always include the following other foods to go along – rice (white or Spanish if you have time), black beans, salsa, guacamole, shredded cheese, lettuce, tomatoes, and tortilla chips. It’s really about what each member of the family chooses to make. Then, the next day you can make sliders or nachos if you’d like. Barbacoa beef is versatile and can make a lot of different meals. Choose the version that works best for your crew. P.S. This recipe can be thrown in the slow cooker. P.S.S.  It makes the whole house smell delicious. Dinnertime winning!

Baked Chicken Legs with Herbs and Lemon

Recently, I picked up two new cookbooks created by Katie Workman – The Mom 100. I started going through her books and website for dinner inspiration and came across this baked chicken with herbs and lemon recipe. Sounds like something I’ve cooked before so that’s always a good start. Chicken, a veggie, and a starch – what could go wrong? I’ll be trying this recipe with roasted asparagus and roasted potatoes or mashed potatoes (I haven’t decided which will be better). I love her method for roasting these leg quarters so I am excited to try this out.

Cheesy Ground Beef Quesadillas

This is another Katie Workman recipe that I felt would help save money this week. Because we are making tacos with the barbacoa beef we have lots of fixings that will go well with these quesadillas. We should have salsa, guacamole, sour cream, cheese, and tortilla chips still available.

In an effort to save money, always look for other meals that you can make with what you’ll already have on hand.

That’s what this meal is all about – it just makes sense. Also, if you want more options,  you could do a batch of just cheese or even veggie quesadillas. On a diet? Use lettuce as a base, not tortillas. Prepare your meals based on the specific preferences of you and your family.

Breakfast at Night

Well, this doesn’t really need a picture nor does it require any explaining. Breakfast at night, brunch, or whatever you want to call it. It’s all your favorite breakfast foods just served at an unconventional time – for dinner. Serve up pancakes, eggs, bacon, and orange juice to keep it traditional. Steak and eggs, omelets, and grits are all fair contenders too. Biscuits with jelly, oatmeal, and waffles will work as well. Just make sure it’s a hot breakfast! Cereal won’t cut it. If you make a hot breakfast often, you may even have enough food on hand to pull this together without much effort. What’s your favorite breakfast food?
