Yikes! I’m running a little behind with my meal plan this week but it’s not too late. Last week was such a weird week. We went to see Adele in concert mid-week, so it definitely made the week interesting. I actually planned no meals last week since I knew we’d be out of town. It would just be too hard to feel forced to make a meal plan, knowing that we had plans like that.
With meal planning, you have to adjust to the current needs of you and your family. Don’t get frustrated if plans change and your meal plan goes out the window. Adjust and start over next week. Simple. I did still have to make school lunches for Marley but that was super easy with PlanetBox. I’ll be sharing more about that fantastic lunch box system very soon.
Here we are again and it’s Wednesday. I already started the week with crock pot roast and veggies. There are some other things on the meal plan that I enjoy cooking, like red beans and rice. Red beans and rice is pretty much a one pot meal and that’s one reason I love it. Even if I’m doing a low-carb diet, red beans can fit right into the diet. They are really budget-friendly too. Even with a premium sausage and bacon, if you like, this meal can be made for under $8 or so. For a family of 4, that’s a deal!
